The sun is back (and so is hayfever) which means BBQ’s, sandals and refreshing drinks. There’s something very satisfying about quenching my thirst with a cool drink. It’s like drinking nectar whilst the sun shines around you (bit of an exaggeration but it’s worth relishing the small pleasures of life).
Lemonade has been a summer staple for me since I was a child, but this cucumber lemonade recipe takes it up a notch. This recipe is the Indian equivalent to my British summer time staple – but with added hydration. Enjoy!
1 large cucumber
½ cup Lemon juice
1 tsp lemon zest
¾ cup caster sugar
6 cups water, cold
¾ tsp salt
- Wash and peel a cucumber (save a few slices and keep aside for decoration)
- Chop the cucumber, add 2 cups of water, add all the sugar then place in a blender
- Blend until the sugar dissolves, pour into a sieve (with a large bowl placed underneath) then add the remaining water
- Add salt, ice, lemon juice and zest. Stir well to combine then serve cold (with cucumber slices prepared earlier)
