Yesterday was gorgeously hot weather! 26 degrees! In London! It was definitely a day for a T-shirt and shorts combination topped off with sandals. However, when the sun comes out, it’s very easy for you indulge in nicely chilled Magnum. They don’t seem to be so chilled with the calories. 275 calories and above, just for a sweet treat. What seems like only a few weeks, has turned into months with the amount of sweet treats I had. I wasn’t going to allow it to be a cycle of constant sweet treats and gradual weight gain to become my new lifestyle so I decided to make an avocado ice lolly.
1 large ripe avocado (butter fruit)
3/4 cup thick coconut milk
3-4 tbsp caster sugar (adjust to taste)
1 tsp lime juice or 1/2 tsp vanilla extract
1. Transfer the avocado to a bowl and mash well. Add the coconut milk & sugar and use a blender to form a soft puree. Add the lime juice or vanilla extract
2. Using a spoon pour in the mixture into popsicle moulds and freeze between 5 hours or overnight
3. When done, remove and serve immediately. To ease out the popsicles out of the moulds keep them under hot running water for a minute or two.
