FOOD: BANANA AND WALNUT GRANOLA
This morning, I went downstairs to have breakfast only to realized that I was out of Granola. (Clearly I had a good weekend to forget to stock up). I had two bananas sitting on the counter giving me the sad face, and then it hit me, why not make my own granola!

Ingredients

Prepares about 7 cups granola
5 cups rolled oats (not quick-cooking)
1 cup raw walnuts
1/2 cup raw cashews
1 teaspoon ground cinnamon
1/8 cup brown sugar
2 very ripe bananas
1/3 cup maple syrup
1/4 cup extra virgin olive oil
kosher salt


Instructions

First, mix all of the dry ingredients: oats, walnuts, cashews, cinnamon and brown sugar together and set aside in a big bowl.
In a small bowl, mash the bananas and mix it about so the spices, sugar, maple syrup & olive oil
Pour wet mixture over the oat-nut mixture so it’s gets coated thoroughly.
Put the mix on a parchment lined baking sheet and bake for 30 mins.
Stir it at 10 minute intervals, until golden brown
Voila! YUMMY GOLDEN GRANOLA.
Let it cool down and then transfer it to a large airtight jar.
