FOOD: BBQ CHICKEN SALAD

 Since my obsession of jerk chicken salad at local cafe near my office. I knew I had to make a version myself. It’s not quite jerk chicken, however BBQ Chicken seemed quick and easy.

This was my most made salad of the summer! I’m sure you understand why now, right?

For the salad:6-7 cups lettuce, chopped

1 cup fresh corn 
1/2 red pepper, chopped
1/2 cup canned black beans 
1/2 cup cilantro, roughly chopped
2 green onions, chopped 
2 Roma tomatoes, roughly chopped
1 avocado, chopped
1/2 cooked rotisserie chicken , shredded
1/2 cup BBQ sauce
1 cup tortilla strips 

For the dressing:1 heaping tablespoon Greek yogurt
Juice of 1/2 a lime
2 teaspoons Sweet & Spicy Tabasco
Salt & pepper


This gorgeous salad serves 3-4 people

Instructions 
Get a large bowl and mix together the lettuce, corn, black beans, cilantro, green onions, tomatoes, avocado, and red pepper then put it to one side. Grab a medium sized bowl and begin to shred the chicken. Next mix the shredded chicken with 1/3 cup BBQ sauce until it is thoroughly coated.

Take a small jar and mix Greek yogurt, fresh lime juice Sweet & Spicy Tabasco with two tablespoons of water. Season with salt & pepper, thyme, chicken season, and whatever else is on your spice rack. As I love Tabasco sauce I added tons more.

Mix both the salad mix with the shredded chicken and toss until fully coated. Pour dressing over salad and keep tossing it till it’s all coated too. Season with salt & pepper along with the other herbs, and serve. Drizzle the BBQ sauce that remains on top of salads and garnish with tortilla strips.

Eat immediately.
