FOOD: CROSTINIS TOPPED WITH AVACADO AND SHRIMP
On the weekend I decided to host a little pamper party, and these little beauties went down a treat. Now this is a little recipe that I learnt whilst I was at university by my gorgeous middle eastern friend. Now I’ve changed the recipe so slightly, as it’s traditionally used with Fava beans, but I decided to go with avocado instead. It makes a great starter, and its a breeze to make too, and best of all it is healthy.


Crostinis topped with Smoky Sautéed Shrimp – Serves 5 to 7

Ingredients

2 avocados
salt and pepper to taste
smoky-sautéed shrimp:
1/2 lb. shrimp, peeled and cleaned with tails intact
1/2 tablespoon cumin
1 teaspoon smoked paprika
Salt and pepper to taste
1 sourdough baguette, thinly sliced and grilled

Instructions

1. Preheat grill to 350°. (If using a grill pan, preheat over medium-high heat)

2. Peel avocados and mash until it’s mushy. 

3. Place shrimp in a bowl. Season with salt, pepper, cumin, and paprika.
4. Place sauté shrimp in the oven on each side for 3 to 4 minutes. Remove from grill and allow to cool.

5. Slice the baguette, and place it on the grill for 1-2 minutes, and allow to cool.
6. Top each piece of crostini with the avocado spread and finish with a shrimp.
