Here’s another spin on the classic lemonade recipe that will keep you coming back for more. Last year, I put cucumber in the spotlight, but today I’m showcasing a true under dog: lychee.
Lychee is a small fruit found in tropical climates with high levels of vitamin C. These fleshy fruits are great to suck on a particularly indulgent day. If you can’t be bothered to peel the vibrant red shell and graze on the white flesh trapped inside one fruit at a time, here’s a recipe to take the hassle out of the taste.
3 unwaxed lemons
2 ½ cups water
mint to decorate
- Blend lychees, lemons and sparkling water until smooth
- Serve over ice. Garnish with mint sprigs
